Peanut Butter Fudge


I had a lovely spot of baking while we were away. After a busy week, I needed a recipe for a sweet snack that I could "take and bake" away from my own kitchen. This recipe had just a few ingredients and only required a stove and a fridge. The peanut butter flavour is intense and deliciously sweet! I found a vintage plate to serve it on that matched our vintage cottage perfectly.


 
Peanut butter fudge (adapted from Donna Hay Magazine Apr/May 2013)
 
130g butter, chopped
1/3 cup cream
1 1/2 cups smooth peanut butter
1 tsp vanilla
2 1/2 cups icing mixture
 
  1. Lightly grease a 20cm square cake tin.
  2. Combine the butter, cream, peanut butter and vanilla in a saucepan over medium heat and stir until melted.
  3. Place the icing sugar in a bowl. Add the peanut butter mixture and work quickly to combine them well.
  4. Pour mixture into prepared tin and smooth the surface. Refrigerate for 1 hour or until set. Cut into small pieces to serve.
