Ladylike Sandwiches

 
 
In the first post of the tea party series, I've got the recipes for two yummy, dainty sandwiches. Egg, lettuce and mayo roll ups were a new recipe that was an instant favourite, and cucumber cream cheese triple layer triangles are an old classic that I love for tea party style affairs.

 
Egg, lettuce and mayo roll ups (adapted from Donna Hay Magazine Kids Annual 7)
 
4 hard boiled eggs
4 tbsp mayonnaise
4 slices white bread
Cucumber ribbons
Shredded lettuce
Toothpicks
  1. Mash together eggs and 2 tbsp mayonnaise.
  2. Cut the crusts off bread and use a rolling pin to flatten each piece.
  3. Spread 1 slice of bread thinly with 1/2 tbsp mayonnaise. Top with 1/4 egg mixture, cucumber ribbons and shredded lettuce. Roll up tightly to form a log. Cut log in half to make two small rolls. You may need a toothpick through the sandwich to hold it together. Repeat with remaining slices of bread.

9 slices white bread
150g cream cheese, softened
2 tbsp lemon juice
Salt and pepper
2 cucumbers, thinly sliced 
  1. Place cucumber on paper towel to drain.
  2. Combine cream cheese and lemon juice. Add salt and pepper to taste.
  3. Spread three slices of bread with cream cheese mixture. Add a thin layer of cucumber to two of the slices. Stack one 'cucumbered' slice on top of the other. Place the remaining cream cheese slice face down on top. Cut from corner to corner on each side to make small triangles. Repeat with remaining slices of bread.
