Camping/Bushwalking Slice

 
Originally labelled bushwalking slice in my favourite camping cookbook, this slice has proved to be the perfect snack for either activity. It's a simple and very generous recipe that travels and keeps well. It's oats are kind of reminiscent of muesli, but definitely the yummiest 'muesli' I've ever eaten.

3 cups oats
2 cups self raising flour
1 cup dried cranberries, roughly chopped
1 cup pistachios, roughly chopped
1/2 cup desiccated coconut
1/2 cup chocolate chips
250g butter
2 cups brown sugar
2 eggs
 
  1. Preheat oven to 180°C. Grease a 20 x 30cm slice tray.
  2. Combine oats, flour, cranberries, pistachios, coconut and chocolate chips.
  3. Melt the butter and sugar in a heatproof bowl over a saucepan of simmering water. Remove from heat and add eggs.
  4. Combine wet and dry ingredients. Press firmly into the tray.
  5. Bake for 15-20 minutes or until the edges start to brown slightly. Allow to cool before slicing.
