I'm not much of a habitual drinker, especially on a school night. But as we head into summer, there's something appealing about having cocktail recipes ready that can be pulled together quickly for impromptu entertaining. This book is more than enough cocktail inspiration for me, and I decided to try out a Moscow Mule (or a Warsaw Mule with Polish vodka?). Even including making homemade simple syrup (1:1 sugar and water in a saucepan on low heat until sugar dissolves), it was easy to make and easy to drink. Cheers!
Moscow Mule (adapted from Mrs Lilien's Cocktail Swatchbook)
Serves 1
Ice
30ml vodka
1 tbsp simple syrup (see recipe above)
Juice of half a lime
250ml ginger beer
Sprig of mint
In a tall glass, pour vodka over ice. Add simple syrup and lime juice, then top off with ginger beer. Garnish with mint sprig.
