I didn't 'get' gingerbread until this year. But this year, I am loving it! I have even had a piece of dough grilled on the BBQ :) This recipe was super simple and I was worried it might not work, compared to some more complex ones out there. There was no reason to worry, however, as these biscuits had plenty depth of flavor. I used the same royal icing recipe from this post. Enjoy!

Gingerbread (adapted from Donna Hay Magazine Dec/Jan 2014)
125g butter, softened
1/2 cup brown sugar
2/3 cup golden syrup
2 1/2 cups plain flour
2 tsp ground ginger
1 tsp bicarbonate of soda
- Cream butter and sugar for 8-10 minutes or until pale and creamy. Add remaining ingredients and mix until a dough forms.
- Roll out dough between two sheets of greaseproof paper until 4mm thick. Refrigerate for 30 minutes.
- Preheat oven to 160 degrees Celsius. Grease baking trays.
- Cut out shapes from dough and place on trays, rerolling as necessary.
- Bake for 6-8 minutes or until golden. Turn off oven and allow to cool completely inside oven.
