Lentil and Couscous Camping Salad

 
What a quick and delicious camping salad! Of course it's not just for camping but also perfect for any BBQ or picnic. It is however, lovely for camping as the ingredients travel well, the salad itself keeps for ages in a container, and it's pretty much a no cook dish. Such a balanced side for us vegetarians too!
 

 
Lentil salad (adapted from Camping Chef)
 
1 cup couscous
1 cup boiling water (can be cold, soak extra 15 minutes)
400g can brown lentils, drained
1/2 red capsicum, diced
 2 spring onions, chopped
1 tomato, diced
1/2 cucumber, diced
1/4 cup basil or mint, roughly chopped
2 tsp olive oil
4 tsp balsamic vinegar
Salt and pepper
 
  1. Place couscous in a salad bowl and cover with the boiling water. Cover bowl and leave for 5 minutes. Fluff up with a fork.
  2. Add lentils, capsicum, spring onions, tomato, cucumber and herbs and toss to combine. Add oil, balsamic vinegar and salt and pepper to the mixture and toss to combine.
