I was in the supermarket on the weekend, thinking how nice it would be to get some honey macadamias or sweet chilli lime peanuts or vanilla almonds, but I never would because of the ridiculous price markup. It occurred to me that it would be very easy and cheap to make my own 'flavoured' nuts! I am grateful that my local shop sells nuts by the scoop, as it means you only buy what you need and it is certainly cheaper. These vanilla almonds are very moreish and additionally to being a delicious snack, they are very cute to bag up and give as a simple homemade holiday gift. I will definitely be experimenting with other flavour combinations!
1 egg white, beaten
1 tsp vanilla
4 cups almonds
3/4 cup sugar
1/4 tsp salt
1/2 tsp cinnamon
- Preheat the oven to 150°C.
- Beat the egg white until frothy. Add vanilla, almonds, sugar, salt and cinnamon and mix to combine.
- Bake on a tray lined with greaseproof paper for 20 minutes, stirring once.
- Cool completely on tray and break into pieces.
