Mexican Fiesta and Seven Layer Dip Recipe



This past weekend Kyle and I hosted a Mexican fiesta for a group of friends. Everything was chosen for it's easy preparation, as we shopped and cooked on the morning of the lunchtime gathering.



I love having a drinks table ready to go for when guests arrive, with everything at your fingertips- wine glasses, cups, straws, cocktail umbrellas... and in this case, moustaches and drink ponchos...

I knew my inflatable cactus would come in handy one day!



Our starters were individual Mexican seven layer dips. They were delicious. See recipe below!
 
 
Drink ponchos are such a quick and cute idea! There is a how-to post coming later this week
 
 
The fresh and yummy salad served with lunch (which was chicken wings- not interested in eating or posting those!)
 
 
We served white wine sangria with cider, apple and mint. It was a great gathering and so simple to host. I love theming even the smallest of parties!
 
Individual Mexican seven layer dips (adapted from here)
 
Layer the dips as follows:
 
Layer 1: refried beans + taco seasoning
Layer 2: sour cream
 Layer 3: guacamole (avocado, lemon juice, salt and pepper)
Layer 4: salsa
Layer 5: grated cheese
Layer 6: chopped tomato
Layer 7: chopped green onions (olives optional)
 
Garnish with a corn chip.
