Easy Peanut Butter Cups

 
I've seen a few recipes for peanut butter cups but this is surely the easiest, with only two layers. How thick you make yours is entirely up to you, as is the combination of chocolates you prefer. The peanut butter 'sand' freezes nicely too and I usually make just 24 at a time, melting chocolate as I need it, until the peanut butter mixture is all gone. It's always a welcome surprise to find some in the freezer. Enjoy these as a Halloween treat or give as an edible gift any time of year (I usually make my boyfriend a batch on Valentine's Day!).
 



Peanut butter cups (adapted from here)
 
50g brown sugar
50g butter
200g smooth peanut butter
200g icing sugar
400g milk or dark chocolate, or combination
Sprinkles, optional
 
  1. Combine brown sugar, butter, peanut butter and icing sugar in a food processor. Process until smooth.
  2. Line mini cupcake tins with mini baking cases. Place 1 1/2 tsp of mixture into each case and press down using fingers or spoon.
  3. Melt chocolate in a heatproof bowl over a saucepan of simmering water. Place 1 1/2 tsp of chocolate on top of peanut butter mixture and spread with spoon. Sprinkle with sprinkles if using. Refrigerate until set.
